Easy all in one pan meal!



I just love easy meals. I have also used sausage in this dish before , I bet you've already thought that? I love all one pan meals, quick, easy and flavorful.


Chicken baked in the panggangan hat is crispy with Italian spices and herbs. A big plus is having all the vegetables in one pan.


That's what makes dinner time so super simple.


My whole family is a big crispy chicken lover. While its baking the chicken gets really juicy inside and crispy on the outside.


We are also big sausage and peppers fan which of course can be substituted.


When I usually make that dish I also add potatoes, the carrots for sweetness and lots of grape tomatoes. You can add sweet potatoes if you like or even broccoli.


Vegetables roasted in the panggangan with this chicken comes out great. Make whatever vegetables your family likes.


I sometimes even substitute plum tomato slices and sprinkle with with bread crumbs. They are so lezat that way.

If you're not a big fan of chicken then of course you can use any other meat.



This is very good with chicken, sausage, pork chops anything your family likes.



You really don't need any thing else but this Italian baked chicken all in one pan.



By adding the potatoes, tomatoes and carrots for sides, you're done, easy peasy!



However you can serve this with a tossed garden salad, some white wine goes great with this dish and a good hard crusted Italian bread.

Easy Clean Up!


If your really in a hurry, you can use a disposable pan and just toss it when your done baking this dish.


Sometimes when I use to get home late from work, that's the only way I wanted to cook something because I hate clean up.


I'm not a fan of the clean up, I really don't the part of washing dishes but I love to make a mess!


That's why I love parchment paper so much. The Baked Italian Chicken won't stick to it!


I line my pans with parchment paper almost all the time. I like that it the bottom doesn't scorch and I don't have to scrub them if anything were to stick to the pan!

Italian Baked Chicken

instructions:


3 pounds chicken parts or bone-in thighs, breast halves or legs ( I used 6 bone in thighs)
4 peeled, cubed and washed potatoes
1 cup of finger carrots
2 large cleaned and sliced peppers
1 cup grape tomatoes
1 teaspoon minced chopped garlic
1 teaspoon granulated garlic powder
2 teaspoons fresh chopped parsley 
1 teaspoon paprika
1 teaspoon salt
 granulated garlic powder
dried leaf oregano, crumbled
dried basil
dried leaf thyme, crumbled
black pepper
olive oil or canola

Garnish: fresh rosemary

Optional: Italian flavored bread crumbs with 1/4 grated cheese

Optional vegetables:  brussels sprouts, broccoli florets, cauliflower florets, artichoke hearts, zucchini or other squash cubed.

Line a 13 x 9 deep baking dish with  parchment paper.
Add the peppers and all other vegetables to the bottom of the pan. Place the chicken on top. 

Drizzle chicken evenly with olive oil. Then sprinkle evenly across the top with parsley flakes, fresh and granulated garlic, paprika, oregano,  thyme, basil, salt and pepper.  If using bread crumbs with cheese,  sprinkle on top. 

 Bake at 375 degrees. Bake for around 1 hour and 55 minutes hour or until chicken is crispy and nicely browned. 

Note:  I use the fresh rosemary on top for garnish
