Here is a one minute microwave delicious applesauce shortcake. This is the perfect dessert for a busy cook and with just a few ingredients on the table for an easy treat.
This may be the easiest dessert on the planet! Seriously. I threw everything in the cup as you can see in the video in 1 minute. I think washing the strawberries and slicing them took longer. All kidding aside, this was a really delicious dessert in a hurry. Bet this would be perfect for kids in a dorm especially when they are away from mom's home cooking. What a great alternative.
I never dreamed that a microwaved cake could taste this good. I thought it would be like rubber or a sponge. The texture isn't exactly like a regular cake but it sure works in a pinch!
I did have to adjust the sweetness. As you can see I also have an alternative for diabetic versions using stevia and almond flour for low carb.
Since there are no eggs in this recipe you can taste it and adjust to your liking. You can add more cinnamon also if you like. My applesauce happened to be with cinnamon in it unsweetened.
Also you can substitute the applesauce for oil or butter. I choose to make this with applesauce for the moisture content. Whichever way you make it, the taste is still very good.
Of course in the video I made the mug cake and added the strawberries and whipped cream while warm. I would wait till it cools before adding the cream as it melts fast.
Mine did cook right at one minutes. I have an 1100 watt microwave. You will have to adjust the time if its higher, I would stop a couple of seconds less. Obviously more if its less than 1100 watts.
You can choose any fruit you like, apples, bananas, berries, peaches. Whatever you like! Garnish with whipped cream.

Microwave Applesauce Mug Shortcake
instructions:
3 tablespoons all purpose flour or you can use almond flour
1/4 teaspoon baking powder
pinch of salt
1 tablespoons plus 1 teaspoon water
2 1/2 tablespoons applesauce
1/4 teaspoon vanilla
1/8 teaspoon cinnamon
1 -1/2 tablespoons sugar or use stevia to taste
Optional: sliced almonds
Cooking spray
Microwave proof mug
Any fruit IE : Strawberries, blueberries, raspberries
Whipped cream
Optional : warmed strawberry jam

Mix the sugar, flour salt, cinnamon and baking powder. Stir to combine. Add the applesauce, vanilla, water. Spray the mug generously with cooking spray. Pour in the batter. Microwave one minute. Remove from cup and place on the plate. Garnish with fruit and whipped cream.
Notes: You may have to adjust the sweetness and microwaves time.
