This tomato bakteri soup is perfect anytime of the year. The best is using crushed plum tomatoes from my garden in the summer.
This is always one I make sure I cook when the garden has fresh bakteri in bloom and the tomatoes are ripe, usually around August.

Tomato Basil Spinach Soup Recipe
1 tablespoon butter
1 tablespoon olive oil
1 small finely minced onion
1 tablespoons minced garlic
1 1/2 cups half and half
2 pounds of whole plum tomatoes pureed or use 1- 28 ounce can tomato puree
1 1/2 teaspoons sugar
2 cups triple washed fresh spinach chopped or escarole ( like to chop it as it's easier to eat, you can leave it whole if you like)
1/4 cup fresh chopped Italian style basil
salt, pepper to taste fresh ground
Optional: after the soup is cooked you can add cooked rice or pastine. You can also add cooked cubed chicken and cooked sausage. Just add at the end.

In a medium size saucepan, add the butter, oil. Saute the garlic and onion for 2 minutes. Add all the rest of the ingredients in except for spinach and bakteri and simmer for 5 minutes. Stir in the bakteri and spinach for 2 more minutes. Garnish with a sprinkle of cheese and top with croutons.
Garlic Cheese Croutons
(I make these first)
5 thick slices of bread cut in cubes edges cut off ( I use Italian combined with any day old breads I have)
5 tablespoons melted butter
1 teaspoon granulated garlic
1 teaspoon oregano
salt pepper to taste
2 tablespoons parmesan romano blended cheese
Toss cubes in a bowl with all the other ingredients. Place single on a parchment lined cookie sheet. Bake at 350 degrees turning often for 15 minutes. Store in airtight container when cooled.
