This is a Banana Cake with Mocha Ganache topping for all my banana lovers out there. It sure is a kegemarane in our home over banana bread, cookies and pies. This one is at the top of my list of kegemarane desserts, but this recipe surely takes the cake!
When I was growing up, mom always made this cake with our over ripe bananas. It was so sweet and I loved how dense it was. It reminds me of banana bread but much moister.
Mom would always dust the cake squares with powdered sugar. Dad was never fond of frosting.
I loved this cake with whipped cream on it. Sometimes even in season some strawberries. The cake really was so versatile to do many things with.

Banana Cake with Mocha Ganance
instructions:
Make the banana cake batter:
1/2 cup butter
2 cups sugar
3 large eggs
1 1/2 cups mashed banana
2 teaspoons of vanilla extract
2 cups flour
1 teaspoon baking soda
pinch of salt
Cream sugar and butter together, beating around 3 to 4 minutes. Beat in eggs and banana's along with flavoring. Mix well. Pour in to a brownie size baking pan. Bake at 350 degrees till brown and set in the middle, using the toothpick method. Bake around 25 minutes. Cool completely.
Dust with powdered sugar or spread with ganache frosting.
Make the Ganache:
1 cup chocolate of your choice chopped I used semi sweet
1/4 heavy cream
1 teaspoon instant espresso coffee or regular instant coffee
Add the chocolate to a microwave proof bowl and microwave on high for 30 seconds stirring until chocolate melts continue 30 second intervals. Stir in the heavy cream and espresso until smooth and blended together.
Spread over the cooled banana cake squares.
